Hamamatsu is a town of Gyoza dumpling now, which has been enjoying the big Gyoza dumpling consumption from the old days, and now whose reputation ranks No.1 or 2 in Japan. The number of Gyoza shops exceeds 80, and the town provides “Gyoza map”, too. Uniqueness of Hamamatsu Gyoza is its cooking style in circle and its relish of boiled bean sprouts. The stuffing of the dumplings is made from cabbage and Chinese cabbage etc, has simple but rich taste. Currently, restaurants chefs are putting their passions into making good dumplings by inventing home-made dipping sauce or home-made red chili oil (ra-yu).
