One of the most popular local delicacies Toyama offers. The pressed sushi is wrapped in green bamboo leaves in a round wooden chip box. Taking off the leaves, you will see beautiful pink trout meat topping white Toyama rice. The origin of this sushi dates back to 1717 when Yoshimura Shinpachi, a samurai of Toyama Domain, dedicated this sushi to the 3rd lord of the Domain, Maeda Toshiaki. It is said that this sushi was also dedicated to the Shogun Tokugawa Yoshimune and received high praise. The traditional recipe has been strictly kept for maximizing trout meat taste.
